Toasted Bruschetta

I'm torn between telling you this is an appetizer or that it's a meal. Typically, bruschetta is eaten as an appetizer. But I made this by itself for dinner one night, with leftovers for lunch the next day. Either way you choose to serve it, I don't think you'll be disappointed.

I browsed through numerous bruschetta recipes before deciding to create my own. The vinegarette isn't usually bottled dressing. Typically, garlic bread isn't used, at all. And I added the cheese because I like cheese. Don't judge my choices until you've tasted my flavors... If you don't like it, go make a pb&j sandwich. :p
