Diet Friendly Meals and Snacks

It's about that time that new years resolutions stop attending the gym. You know who you are! I'm right there with you. I started some 30 day challenges in hopes of better commitment but I've missed days :/

I suck at exercise but can totally rock out some figure friendly foods! So I thought I'd give you guys a list of my favorite meals or snacks to keep you inspired and on the weight loss band wagon.

*I'm not a doctor, dietician or fitness trainer. Just someone who likes to eat healthy, so take your health in your own hands and see your expert for accurate opinions.

1- Refrigerator oatmeal (google or search pinterest, there's hundreds of variations).

2- Greek yogurt and fruit for breakfast, the protein will hold off hunger.

3-fruit instead of sweets-natural sugars people.

4-beans instead of or in addition to meats- black and kidney beans are easy substitutions that still give protein, I also love adding refried beans to Mexican dishes to stretch meats (I rarely buy or eat meat so I try to stretch it when I can).

5- tuna salad with crackers or veggie sticks (celery is my fav)- no bread = low carbs.

6-hummus. Try all the flavors before you rule it out. I like roasted red pepper hummus with veggie sticks, crackers, smeared on wraps, or baked on chicken.

7- fish- baked, broiled or grilled. Fish is super quick to cook so you can't say it takes to long! Add lemon juice to remove the fishyness.

8- zucchini boats. These are my new favorite dinners!! Stuff them with anything and they're amazing. And taste good for leftovers.

9- 3,2,1 mug cake. Mix a box cake mix with a box angel food cake mix (dry ingredients only). Put in airtight container. To eat- mix 3T dry mix and 2T water in a mug or coffee cup or small bowl, and heat for 1 minute in microwave. I don't know the stats on this but there's no oils, eggs, or frosting so it's at least healthier than a cup cake.

10- smoothies. Meal replacement, snack, dessert- just switch up the ingredients to meet your needs. My favorite combination for breakfast is spinach, cottage cheese, Greek yogurt, frozen strawberries, bananas, and blueberries, milk, and oats.

I hope this helps you stay on track. I'd love to hear what foods you turn to when working on diets and weight loss!

Black Bean Tostada!

black beans, tostada, tortilla, turkey, ground turkey, recipes, rotel, mexican, food

Taking a Scentsy break tonight. It's a creative foodie kind of evening around here. I cooked up this AMAZING tostada and the roomie whipped up some of his famous stir fry. OMG was dinner ever tasty! This is currently my favorite thing I've ever created. Black beans, rotel, ground turkey on a toasted tortilla, what could go wrong? Not a darn thing. :)

So this idea came to me after making a bag of dried black beans today. They spent all day in the crock pot and I couldn't just bag them all up and freeze them. I had to have some! So I started going through my pantry and came across some Mexican-y flavors that mix well. My poor hamster had to get her lazy butt up and work that wheel tonight.

1. Fry up some ground turkey. I had two pre-made, frozen patties that I sauteed in 2T of oil.
2. I added one can of rotel, 1 1/2c black beans, 1/2c pureed black beans. I eyeballed some seasonings to my taste buds liking: garlic powder, s&p, curry, cumin, and chili powder.

3. While all of that is sauteing, I heated my oven to 500 and toasted up some tortillas, just long enough to brown them on each side. Make sure you poke holes, with a fork, in the tortillas before putting them in the oven so that they won't get any bubbles.

4. Last, I just spooned on the bean mixture, drizzled some ranch (my bad habit) and sprinkled with cilantro.

Let me know if you try this, I'm curious to see how others may change it up!
